Summer Spaghetti Recipe


Need a light, fresh pasta dish for Memorial Day? You've come to the right place! This summer spaghetti recipe, courtesy of my daddy, is perfect for any summer day and so, so easy to make! The best part about it, is that what you don't eat it can be used as bruschetta. How great is that?!
 Ingredients:
 
10 Roma Tomatoes
1/2 cup Olive Oil
2 tablespoons Red Wine Vinegar
2 pinches Red Pepper Flakes
1 cup Mozzarella, grated
1 tablespoon Garlic, minced
2 tablespoons Basil, fresh
Salt (garlic or regular) and Pepper
Angel Hair Pasta
 
(serves 5)
1. Dice roma tomatoes into a bowl.
2. Add other ingredients, excluding mozzarella, salt and pepper to taste.
3. Stir and let sit at room temperature for 1 hour to let tastes meld. (I like to let mine sit for approximately two hours but that's just me.)
4. Add mozzarella right before cooking pasta.
5. Cook pasta and serve with topping.
If you try this, you will have to let me know what you think! I'm no chef, unless mac and cheese counts, but this is super easy to make and tastes amazing!
